Spiritual descendants of Prosper Montagné, master chefs of French cuisine and natives of Carcassonne, the members of the Universal Cassoulet Academy are respectful of history and remain loyal to the TRILOGY as described by the Master: «Cassoulet is the God of Occitan cuisine, a God with three heads: Castelnaudary the Father, Carcassonne the Son, Toulouse the Holy Spirit, they are all Cassoulets.»
The logical sequence to the initial steps taken by the founder members was the creation of the Cassoulet Trail between Narbonne in the Aude and Toulouse in the Haute Garonne.

The emblem of the Universal Cassoulet Academy is an earthenware dish, used since Antiquity and often copied but never replaced, in which are left to simmer the ingredients of this unsurpassed dish, much appreciated by lovers of good food who compliment each other with a cry of ACO V'AIMI !
To promote
cassoulet, its constituent ingredients and the
cultural heritage associated with it.
To bring together
men and women for whom expertise,
quality and originality equate to a love of life
in thought word and deed and to eating well.
To create a wareness of
the culinary creativity, traditions, language, human
values and warmth which remain the prerogative
and custom of those living in the south of France.
To organize and take part
in gastronomic, cultural, artistic, tourist
or media activities with the sole aim of promoting
cassoulet throughout the world and developing
awareness of the region’s Master Cassoulet Chefs.
It was on the initiative of Head Chef Jean-Claude Rodriguez of the CHÂTEAU SAINT - MARTIN TRENCAVEL at the HAMEAU DE MONTREDON near CARCASSONNE, that 8 founder-members (4 Head Chefs and 4 passionate cassoulet connoisseurs) created the association:
