The logical sequence to the initial steps taken by the founder members was the creation between Narbonne in the Aude and Toulouse in the Haute Garonne of the Cassoulet Trail, along which can be found Master Cassoulet Chefs who have undertaken to respect the Charter.

Immediately after the creation of the Universal Cassoulet Academy, and in order to protect its originality, its regional character and therefore its future, the founder members took the logical decision to designate a “Cassoulet Trail” and to register the name and logo "Académie Universelle du Cassoulet et Route des Cassoulets" with the French Intellectual Property Office (INPI).
That was on the 30th September 1999; ten years have passed already!
A Restaurateurs’ Charter was also drawn up.
Members of the Admissions Committee vet all prospective chefs. On the day of inauguration approved candidates undertake to respect the code of regulations formulated in the charter which you will find below.
