According to the eight founder members of the Universal Cassoulet Academy, Head Chefs and ardent gastronomes who are advocates and champions of this regional speciality, the objective of the Universal Cassoulet Academy is:

• to promote Cassoulet and the ingredients involved in its creation
• to organise and participate in any event which might further the awareness of Cassoulet , symbol of the cultural heritage of the region

The Cassoulet Trail

The Universal Cassoulet Academy is based in Carcassonne in the south of France. The ‘Cassoulet Trail’ runs from Narbonne to Toulouse via Carcassonne and Castelnaudary, with occasional incursions into neighbouring départements.

Event Organisation

The Universal Cassoulet Academy organises and hosts evening festivities in honour of the venerable Cassoulet.
The Academy is available for the organisation of gastronomic meals and cultural activities based on cassoulet.

The Academy throughout the world

Certain top-quality restaurants have seen their chefs inaugurated into the Academy on the recommendation of the tasting committee and by fulfilling the necessary criteria. These establishments become either flagships for or embassies of the Universal Cassoulet Academy.
