Delicious dishes, each accented with the flavours of its terroir. Grave accents, acute accents, circumflex accents, each like a touch of colour but here the touch of flavour. The artist is not in front of his easel but at his oven, guardian of a standard, holder of a recipe he has made his own while maintaining respect for its ancestral roots.
These men and women are worthy in many different respects but they are especially worthy quite simply for flying the flag for the Cassoulet Trail.
Rewriting the history of their country through their food, they are passionate to the point where their very existence is rooted in one precise place, and the word ‘culture’ expresses the rest.
Impassioned professionalism moves to another level as its skills are deployed in the service of that which is most precious to the Occitan identity: gastronomic culture!
